Raspberry Mango Avocado Salad

Let me just start by saying that I am sorry there aren’t more pictures, but it is as easy as cut and assemble. I impulsively bought this vinaigrette a while ago and knew I wanted to do a fun salad with raspberries in it, but the internet suggested adding mango. There are all types of variations of this on the internet. Feel free to use mine or someone else’s, but I highly suggest eating it with this vinaigrette! And as always, cheese would work in this too. I would recommend feta.

This will definitely stay in the rotation this summer!

Tip: Add grilled shrimp to this to really pump it up!

Serves: 1-2 (Very easy to add or subtract)

Cook Time: 10 Mins

Ingredients:

  • 2.5 Oz Spring Mix

  • 1/2 Mango, Cubed

  • 1/2 Avocado, Cubed

  • 8 - 10 Raspberries

  • 2 Tsblpns Red Onion, Finely Sliced

  • 1-2 Tblspns Sliced Almonds

  • 3-4 Tblspns Blush Wine Vinaigrette

Instructions:

  1. Cut up the onion, avocado, and mango.

  2. Add to a bowl with the spring mix and almonds.

  3. Mix in the vinaigrette.

Boom! Easy peasy raspberry squeezy!

Pairs well with white wine on a hot day.
