Honey Soy Chicken Meatballs

As an Italian, I was always raised to believe meatballs can't exist without cheese in the mix. Turns out, that is a lie even though my nonna is probably rolling over in her grave hearing this. I was also worried because chicken is a leaner meat that tends to dry out easier, but neither of those were an issue.

This is a great recipe to try as a meal prep option for the office or as an easy weeknight dinner.

Tips:

- Try not to get the leanest chicken, if you can help it because you are going to bake these and it helps if there is a small amount of fat.

- Don't be stingy with your seasonings and sauce!

- Try to take the chicken out of the fridge at the last second. The colder it is, the easier it is to roll the meatballs!

Serves: 3 - 4 (Makes about 13 Golf Ball Sized Meatballs)

Cook Time: Approx. 30 mins

Ingredients:

Meatballs:

- 1 lb Ground Chicken

- 1-2 Bunch(es) Scallions, Sliced

- 1 Egg

- 3 - 4 Cloves Garlic, Minced

- 2 Tspns Panko Breadcrumbs

- 1 1/2 Tspns Toasted Sesame Seeds

- 1/2 Tspn Kosher Salt

- 1/4 Tspn Black Pepper

- Non-stick Spray

Honey Soy Sauce:

- 4 Tblspns Hoisin Sauce

- 3 Tblspns Rice Vinegar

- 2 Tspns Soy Sauce

- 2 Tspns Honey

- 1 1/2 Tspns Ginger, Minced

- 1/2 Tspn Sesame Oil

Optional:

- 1 Tspn Sriracha

- 1/4 Tspn Peanut Butter

This may look like a lot, but I promise it is a quick meal!

Instructions:

Meatballs & Sauce:

1. Preheat oven to 400 degrees.

Add all of the dry ingredients to a bowl, followed by the liquid ingredients in a bowl and mix well.

2. Spray a pan with non-stick spray so that the surface is well coated.

3. Roll the mixture into golf ball sized balls and place on the pan. Space them out as best as you can to allow the heat to flow.

4. Put in oven and let cook for approximately 10-12 minutes or until the balls start to slightly brown. You can always take a test one and cut into it as well and if the interior is fully cooked, that can also be your indicator.

5. While those balls are cooking, pour all of your ingredients into a bowl and whisk well for about 1 minute. Let sit.

6. Once the balls have finished cooking, take them out of the oven and dip each one into the sauce. Use the remaining to drizzle on top of the dish.

If you have left over scallions and/or sesame seeds, they make great garnishes and add a little extra crunch! Enjoy this with a side of rice and vegetables!
