Goat Cheese & Leek Quiche

This recipe is for all the brunch people who don't want to put in a lot of work for something tasty. The flavor is subtle, but delish!

Tip: Take your time cleaning your leeks. They are very dirty, but so good!

Serves: 4

Cook Time: 45 Minutes - 1 Hour

Ingredients:

- 1 9-inch Premade Pie Crust (You can always make your own as well. I was feeling lazy.)

- 3-4 Eggs (If they are extra large, you can use 3)

- 2 Leeks, Cleaned and Sliced

- 2 Tablespoons Butter

- 2-3 Oz Soft Goat Cheese

- 1/2 Cup Half & Half

- 1 Teaspoon Salt

- 1/2 Teaspoon Nutmeg

- 1/2 Teaspoon Garlic Powder

Instructions:

1. Preheat oven to 400 degrees.

2. Poke the pie crust all over with a fork and bake for about 10 minutes. When that is finished, lower the oven to 375 degrees.

3. Add the butter to a pan and let it melt. Then add the salt and leeks.

4. Saute for about 10 minutes until the leeks are tender and fragrant.

5. Whisk the eggs, half & half, nutmeg, and garlic powder together in a bowl.

6. Scoop the leeks into the pie crust and layer in the goat cheese.

7. Pour the egg mixture on top.

8. Bake for approximately 35 minutes.

9. Slice it up and dig in! This pairs well with a white or sparkling wine.
